Mashed Cauliflower

This is a particularly creamy variation of mashed cauliflower, a healthy low-carb recipe from LiveEatLearn is not only keto friendly but contains almost as much Vitamin C as oranges.



Cauliflower is not only a low-calorie, low-carb substitute for potatoes, but it has high nutritional content. One cup of raw cauliflower contains 58% of the body's daily need for Vitamin C. Cauliflower, a high-fiber food, also promotes healthy digestion. High-fiber diets are also linked to lower incidents of diabetes, heart disease and cancer. Cauliflower is such a versatile food showing up in the form of rice, pasta, tortillas, hummus, mash, and pizza crust that it is easily incorporated into anyone's diet.

The addition of the small amount of cream cheese in this recipe makes this dish taste much more creamy and rich.


Ingredients

  • 1 large head cauliflower

  • 4 Tbsp cream cheese

  • ¼ tsp each salt and pepper

Brown Butter (Optional)

  • 4 Tbsp unsalted butter

  • 2 cloves garlic, minced

Directions

  1. Steam: Start up a large pot of boiling water, with a steamer basket positioned over it. Chop the cauliflower into chunks, removing the tough inner stem. Transfer to the steamer basket, cover with a lid, and cook for 15 minutes, or until cauliflower is fork tender.

  2. Brown Butter (optional): Meanwhile, add butter to a pan (use a light-colored pan if possible so you can see the change in color) and place over low/medium heat. Melt butter, then add minced garlic. Continue cooking. Butter will first bubble, then after 5 or so minutes will begin to darken. When little dark bits begin to form and the butter has darkened to the color of light caramel, remove from heat.

  3. Puree: Place cauliflower, cream cheese, salt, and pepper in a food processor and puree until smooth and creamy.

  4. Serve: Serve warm, optionally topped with a drizzle of brown butter.
