High-Protein Black Bean Brownies
INGREDIENTS
3 Tablespoons vegetable oilÂ
3 eggsÂ
1 teaspoon vanillaÂ
1 and 3/4 cups of cooked (and cooled) black beans OR 1 can (15 ounces) of black beans, drained and rinsed Â
1/2 well-rounded cup of packed brown sugarÂ
1/3 well-rounded cup of unsweetened cocoa powder (100% cacao)Â
pinch of salt
1/2 cup chopped nuts (optional)Â
1 Tablespoon powdered sugar (optional)
Instructions
Preheat oven to 350F degrees.
Lightly grease an 8x8 inch or 9x9 inch baking dish.
In a blender container or food processor, mix oil, eggs and vanilla.
Add beans and blend until smooth.
Transfer mixture to a bowl.
Stir in sugar, cocoa, salt and nuts (if desired).
Pour the mixture into the baking pan. Bake until a knife inserted into the center of the brownies comes out clean, about 30 minutes.
Let cool and cut into 16 squares. Sprinkle with powdered sugar, if desired.
Cool completely. Store in airtight container in the refrigerator.
